Soffritto is used in Italy, Spain, France, and Latin America as a base for many meals to enhance the flavor of food. Nonna Iole, (Grandma Iole) prepared batches of it in advance to be used on a daily basis so she could prepare wonderful homemade recipes saving prep time in the kitchen.

1 pack (500gr) pappardelle pasta (Trader Joes)
4-6 chicken tenders- bite size (1” cubes)
2 carrots finely chopped
1 cup frozen peas
1 cup heavy whipping cream
2TBS Soy sauce
1/3 cup parmesan cheese -grated.

How to Use Soffritto
Stir fry/ Sauteing: Drop a teaspoon or two in a pan with 1 TBS olive oil. Saute 1 minute. Add cooking ingredients and stir fry covered for few minutes.
Marinade: Let meat- fish marinade in two tsp Soffritto mixed with olive oil and lemon or white wine before grilling or baking.
Bake: Brush 2 tsp of Soffritto over meat/fish and splash with 1 TBS olive oil. Add ½ cup white wine (optional) before baking.
